I Love Spring. Spring is fresh, clean, renewed. It’s Easter and all the beautiful flowers that time of year brings. It’s the kids starting baseball and soccer. It’s sunshine and warmth and long walks. It’s the dog rolling in the new fresh grass. It the time of year where you fell rejuvenated and feel like things aren’t too huge to tackle. It’s full of things to do, people smile more, and we are all a little happier.

I love the food too. Simple and quick. There is so much to do that you want the meals to be quick and easy, but still healthy and filling. So this month, I am including 2 healthy dinner options that are super fast, super easy, and super good.

Enjoy your spring. After the winter we have had, we deserve it ! Enjoy your family, see your friends. Go to your kid’s games and holler your heart out. Let the dog roll in the grass, even it means another bath. We have all been cooped up for so long!!! Do something nice for yourself, whether it’s a new outfit, haircut, or painting a room a bright fresh color. I always wash  my curtains and get a new bed spread. Same thing my mom always did - old habits die hard! But most of all, really take time to smell the flowers, feel the breeze and thank God for the beautiful days we will enjoy. And don’t forget to thank a Soldier. Even in the heat, it’s always winter to them, away from their loved ones. My friend saw a Soldier on leave just the other day with his family and bought them dinner. Such a small thing, but in the end, everyone was crying - it means so much!!! Hopefully with this spring’s renewal, we can hope that this will be the year when we all get to come home.

Easy Crock Pot Supper
3-4 bone-in chicken breasts
1 chopped small onion red or white
1 small green pepper, chopped
1 tsp wet garlic or granulated garlic
salt & pepper
1 tsp each oregano, basil
1 large can whole peeled tomatoes

Cook all of the above on HIGH 6-7 hours until chicken is falling off bone.
Remove chicken, de-bone, place chicken back into gravy.
Serve over pasta or rice with parmesan cheese.
Serve with a nice salad and bread. Enjoy!


Easy & Quick Taco Casserole
Brown 1 lb. ground beef, drain. Add 1 package taco seasoning.
Layer in bottom of sprayed casserole dish in this order:
ground beef
1 can refried beans
shredded cheddar cheese (about 1 cup)
broken up corn tortilla chips
additional cheese for topping

Bake at 350 for 15 minutes or until cheese is melted.
Serve hot with sides of bowls of shredded lettuce, chopped tomato, salsa, sour cream, and guacamole for toppings. Delicious!!! Prepare some Uncle Ben’s Microwavable Spanish Rice and you’ve got a quick and easy meal!
